Goshen’s Tofu Stir-fry

Goshen’s tofu stir-fry is a nice vegetarian meal that is a healthy alternative for you veggie lovers out there. The tofu has a pleasant creamy texture which is complemented by the crunchy stir-fried vegetables. Goshen’s tofu stir-fry is also complemented will with a rice dish for someone who is looking to stretch out the meal to feed more or just to add a nice touch. Tip for Goshen’s stir-fry; buy firm tofu to make it easy to cut neatly.

Serves 2-4

Ingredients:

· 8 ounce (about 227 grams)of white cabbage

· 8 ounce(about 227 grams) of package fresh firm tofu

· 6 ounce(about 171 grams) of green beans, trimmed

· 3 scallions chopped

· 2 fresh green chilies

· 2 cloves of garlic crushed

· 1 cup (about 226 grams)of baby corn halved

· ½ cup(about 113 grams) of bean sprouts

· 1 ¼ (about 300 milliliters) cups coconut milk

· 3 tablespoons(about 43 grams) smooth peanut butter

· 1 ½ tablespoon( about 23 milliliters)of dark soy sauce

· 3 tablespoons(about 45 milliliters) of vegetable oil

Directions

Step 1: Shred the cabbage and carefully remove the seeds from the chilies and chop finely.( A tip for Goshen’s tofu stir-fry remember when cutting vegetables use a sharp knife and a cutting board and be extra careful always cut away from yourself. ) Using a sharp knife cut the tofu into thin strips. Add 2 tablespoons of oil to a frying pan and heat until oil is hot.

Step 2: When the oil in the frying pan is hot add the tofu and stir-fry for 3 minutes and remove. Set aside on a plate and clean out frying pan. Add the remaining oil to the frying pan. When the oil is hot add the garlic, scallions, and chilies and stir-fry for 1 minute. Then add the green beans, corn, and bean sprouts and stir-fry for 2 more minutes. In Goshen’s tofu stir-fry you can spice the vegetables as you like while you are frying them.

Step 3: Add the peanut butter and soy sauce to the frying pan. Stir well to coat the vegetables. Then add the tofu back into the vegetable mix. Pour coconut milk over the vegetables and simmer for 3 minutes. Then you are ready to enjoy Goshen’s tofu stir-fry.
