Goshen’s Spicy Vegetables

Goshen’s spicy vegetables are a wonderful vegetarian meal for two. This dish can also be a wonderful vegetarian appetizer for up to four people. Goshen’s spicy vegetables have a wonderful mix of vegetables in coconut milk. This dish is garnished nicely with salt, pepper, and cilantro sprigs. Goshen’s spicy vegetables are also nicely complemented with whole grain bread to mop up the tasty coconut milk.

Serves 2-4

Ingredients:

· 6 celery stalks

· 2 large carrots

· 3 sliced scallions

· 1 crushed garlic clove

· 14 ounce(about 30 milliliters) can of coconut milk

· 1 fresh red chili

· 1 fennel bulb

· 1 inch(about 25 millimeters) piece of fresh ginger grated and peeled

· 1 tablespoon(about 15 grams) of chopped fresh cilantro

· A pinch of garlic salt and pepper

· 2 tablespoons(about 25 milliliters) of peanut oil

Directions

Step 1: The first step in Goshen’s spicy vegetables is to halve, seed, and finely chop the chili. Then thinly slice the carrots and the celery stalks on the diagonal. Trim the fennel bulb and slice roughly.

Step 2: Heat a large frying pan and then add the peanut oil. Then when the oil is hot and add the chili, fennel bulb, carrots, celery, ginger, garlic, and scallions and stir-fry for 2 minutes.  After the 2 minutes add in the coconut milk and pepper and bring the coconut milk to a boil.

Step 3: Stir in the chopped cilantro and garlic salt. Then garnish the dish with cilantro and enjoy Goshen’s spicy vegetables.
