Goshen's South of the Border Margarita Chicken Wings

In this adaptation of Goshen's southern style cooking he decided to take a trip down to the border and come back with Goshen's south of the border margarita chicken wings. Marinating is suggested in this recipe however not required to have the wonderful taste of Goshen's south of the border margarita chicken wings. (Refer to Goshen's baked chicken recipes for marinating procedures tequila is a good marinating substitute for beer or wine on this one) Goshen's south of the border margarita chicken wings serves 6 and is a nice treat if you're feeling like taking a trip down south of the border.

Ingredients:

·  2 ½ pounds(a generous 1.1 kilogram) of chicken wings, separated at the joint

·  2 tablespoons(30 milliliters) of cilantro minced

·  1 teaspoon(5 milliliters) of salt

·   1 teaspoon(5 milliliters) of black pepper

·   ½ teaspoon(2 milliliters) of ground cumin

·    2 cloves of garlic minced

·    1 lemon (only its juice)

·    1 lemon (Only its zest, meaning finely shaved lemon skin)

·    ½ cup(125 milliliters) of golden tequila

·    ¼ cup(50 milliliters) of frozen orange juice concentrate

·   Pinch of red pepper

Step 1: Put the minced cilantro, salt, black pepper, ground cumin, minced garlic, lemon juice, lemon zest, golden tequila, frozen orange juice concentrate and pinch of red pepper into a bowl and mix thoroughly. Remember that the more thoroughly the ingredients are mixed the better Goshen's south of the border margarita chicken wings will taste.

Step 2: Grab a reseal-able bag or two and put the chicken wings in the bag. Pour the mixed ingredients into the bag or two making sure the chicken is being marinated. This will need to be marinated for at least 120 minutes but the longer the better preferably overnight. Remember the longer the chicken gets to marinate the better the chicken wings will taste.

Step 3: Pull the chicken out of the refrigerator and either start up the grill or preheat the oven. If you are planning on baking the chicken the oven temperature needs to be 350 degrees (175 Celsius) and cooked 30-40 minutes depending on the stove. Remember to put aluminum foil on the bottom of the pan you plan to cook the chicken on. For grilling you will want the grill temperature around 350 degrees (175 Celsius) and put the chicken directly on grill and cook until desired and the juices run clear from the chicken. After you pull the chicken out of the oven or off grill Goshen's south of the border margarita chicken wings are ready for the siesta.
