Pasta Salad to Please the Entire Family!

I have a great pasta salad recipie that I would like to share with everyone. The holiday season is coming up and for many years I have produced a nice side dish for family get togethers that has proved to be an instant hit for all.

You will need the following ingredients:
(Double as nessesary for larger crowds)

1 bag of rainbow pasta
1 can of pitted black olives
1 16 oz bottle of Italian Dressing
1 bag sliced pepperoni (or other means as you see fit)
1 8 oz block of Cheddar cheese
1 8 oz block of Mozzerella cheese
1 8 oz jar of Parmasean cheese (you will not need all of it)
Garlic Salt, Pepper, seasoning

Optional ingredients:
Sliced Salami
Green Olives
Green Onions
Bell Peppers

Equipment:
Cutting Board
Sharp Knife
Large Tupperware w/ lid or Bowl
Large Pot

This is a nice project to do when you have a Saturday while watching the tube, but can be accomplished fairly quickly if necessary.

The first thing is to boil the pasta in the large pot. Let it boil until the pasta is firm, but not chewy. 15 minutes or so. Meanwhile, prepare all of your ingredients. If you choose to, you can buy most of the ingredients already sliced/diced, which will save time, but may sacrifice freshness. I prefer to do the prep work myself. The Cheddar and Mozzarella should be diced in 1/4" or so pieces. The slice pepperoni and/or salami should be sliced into thin strips about the size of a matchstick. Varying sizes and shapes are recommended. The veggies, if you are using them should be cut as would be with a salad, or diced into small pieces. Some larger pieces add texture and visual appeal.

Once the pasta has cooked and is drained and cooling in the tupperware dish, start adding the prepared ingredients. Start with half the bottle of Italian dressing to make it easier to mix. Add all ingredients while mixing and continue to add the remaining Italian dressing. Top off with a nice thick coat of parmesean cheese. The pasta will soak up much of the dressing and retain that flavor. I recommend making the salad 1 day prior to the event with the exception of adding the cheddar and mozzarella cheese right before the event, so it doesn't get squishy. The rest will soak up the dressing and the flavor is very nice.

Serve this up in the tupperware at a pot luck, or transfer the finshed salad to a nice dish for a more formal affair. This pasta salad is sure to be a crowd pleaser. I had to show my inlaws the recipie just so I didn't have to make it 4 times per holiday season!
