Mewi's Potatoes With Ribs

Mewi’s potatoes with ribs is a great recipe if you are the type of person that really enjoys eating meat, specially pork.

This is an inexpensive and extremely easy to prepare dish, that is full of flavour and it‘s well combined with peppers, potatoes, onions and garlic.

This recipe serves up to 4 people.


- 1 kg (35 oz) potatoes, chopped into medium pieces
- 500 g (1 lb) pork ribs
- 1 onion, finely chopped into small pieces
- 1 red, green and yellow pepper, finely chopped into small pieces
- 2 cloves of garlic, chopped into very small pieces
- 100 ml (6 ½ tbsp) olive oil
- Salt*
- Powdered black pepper*
- Parsley*

* These ingredients are optional in the amount use for them when cooking.


1) Heat the oil in a non-stick cooking pot.
2) Fry the onion pieces on low heat until they start becoming translucent.
3) At this point you add the red, green and yellow pepper pieces and continue cooking for a further 5 minutes, seasoning with a little bit of the powdered black pepper.
4) Now add the garlic and the chopped ribs and cook in medium heat for about 10 minutes.
5) Next add the potatoes and season them with the parsley, coating them well with the oil too.
6) Boil some water and add enough to cover the ingredients in the pot whole with the water.
7) Season with some salt and leave it to cook on low heat until the potatoes become tender (it should take around 45 minutes).
8) Once ready, just serve!
