How To Prepare A Grilled Chicken Breast, Mashed Potatoes & Sauce

To prepare a farm fresh chicken breast you may need a sauce and mashed potatoes to eat along. You can also take with vegetables of your choice. This is a very tasty food for everyone. It serves 2 and takes 1 hour to prepare. 

Ingredients

  • 2 chicken breast.
  • 3 onions, chopped.
  • 2 cloves garlic, crushed.
  • Juice and zest(skin) of 2 oranges.
  • 500ml brown sauce (flour and butter)
  • 5 large potatoes.
  • Butter.
  • Salt and pepper.
  • 250ml cream or milk.
  • Zest of 1 lemon.(grate with fine side)

Method

  • Grill the chicken breasts for 30 - 35 minutes under a medium grill.
  • Season to taste with salt and freshly ground black pepper.

To make the sauce

  • Sauté onions and garlic in a little butter for about 5 minutes until translucent.
  • Add the orange juice and zest and bring to boil.
  • Add the brown sauce. 

To make the mashed potatoes

  • Boil the potatoes until well cooked.
  • Drain, allow to cool and then peel the skin.
  • In a pan, add a knob of butter to the potatoes.
  • Season with salt and pepper.
  • Mash the potatoes, slowly adding the cream/milk.
  • Add the lemon and orange zest when nearly finishing mashing.
  • Serve your dish with vegetable of your choice or use chips instead of mashed potatoes.
