Preparing a cake using whisking method involves mixing the eggs with sugar.  It makes cakes called sponge cakes.

Ingredients

·        90g plain flour

·        90g caster sugar

·        1 tablespoon hot water

Method

1.     Prepare two 15cm diameter tins and light the oven.

2.     Sieve flour and put in a plate, warm it but not in an oven.

3.     Put the eggs and sugar in a large bowl and stand the bowl in a basin of hot water

4.     Whisk the eggs and sugar together using an egg or rotary beater until the mixture is white, fluffy and leaves a trail behind the whisk.

5.     Remove the bowl from the saucepan and continue whisking until the trail left by the whisk last for 3 seconds.

6.     Sieve flour again onto the surface of the whisked mixture and using a palette knife or tables, fold the flow lightly into the mixture.

7.     Add hot water and continue folding in lightly.

8.     Divide the mixture equally into the two tins and bake until set and golden brown.

9.     Cool in cooling rack.
