Coating a cake with Icing and decorations is the last steps to making a cake.

Coating a Cake with Icing:

1.      Put the cake onto a cake board. If possible stand the board on a turn table or a plate turned upside down.

2.      Pour most of the royal icing on top.

3.      Spread icing away from the centre down the sides using a palette knife or ordinary knife dipped in warm water.

4.      To neaten the sides, hold the blade straight down against the icing and gently draw round the sides using same pressure to ensure a smooth and even surface.

5.      To neaten the top, hold cake icing spatula or edge of palette knife or ruler (dipped first in warm water and shaken across the top of the cake holding one end in each hand and drawing slowly across.

6.      Allow to dry before piping decoration on.

7.      Other good method is using a roller pin to flatten the icing before placing it on top of the cake.

How To Pipe Decorations:

1.      For elaborate designs, make the designs on a greaseproof paper cut the same shape as the part to be decorated and place on the cake.

2.      Using a sharp sterilized pin prick through the design on the paper to the cake.

3.       Remove the paper.

4.      Pipe following the pricked designs.
