Goshen’s Thai Meatballs

Goshen’s Thai meatballs are a wonderful appetizer that is wonderful for a game day snack or an appetizer to an elegant meal. The Thai meatballs can be made with lean ground pork or beef. Goshen’s Thai meatballs are also served with a savory peanut sauce.  This wonderful appetizer or snack is best garnished with cilantro sprigs. Goshen’s Thai meatballs are a wonderfully unique appetizer that will impress friends and family.

Serves 4-6

Meatball Ingredients:

· 1 pound (about 450 grams) of lean ground pork or beef

· 4 scallions finely chopped

· 1 egg

· 1 tablespoons (about 14.3 grams) of fresh finely chopped cilantro

· 1 lemongrass stalk finely chopped

· 1 tablespoon (about 14.3 grams)  of chopped garlic

· 2 tablespoons(about 28.6 grams) of red curry paste

· 1 tablespoon(about 15 milliliters) of lemon juice

· 1 tablespoon(about 15 milliliters) of fish sauce

· Rice flower for dusting

Ingredients for garnish

· Sprigs of cilantro to garnish

· Salt and pepper

· Vegetable oil for frying

Ingredients for peanut sauce:

· 2 tablespoons (about 30 grams) of crunchy peanut butter

· 1 tablespoon(about 14.3 grams) of red curry paste

· 1 tablespoon(about 14.3 grams) of palm sugar

· 1 cup(about 225 milliliters) of unsweetened coconut milk

· 1 tablespoon(about 15 milliliters) of lemon juice

· 1 tablespoon(about 15 milliliters) of vegetable oil

Directions:

Step 1: The first step is to make the peanut sauce by heating the oil in the peanut sauce ingredients in a small saucepan. Then add the curry paste and fry for 1 minute.  The peanut sauce complements Goshen’s Thai meatballs nicely. Stir in the rest of the ingredients and bring to a boil. Lower the heat and let simmer for 5 minutes until the sauce thickens and set aside and keep warm.

Step 2: The next step in Goshen’s Thai meatballs is to combine all the meatball ingredients and mix everything together thoroughly in a large bowl. Then roll and shape the meatballs into small balls about 1 ½ inches by 1 ½ inches (About 4 cm by 4 cm) and dust the meatballs with the rice flower.

Step 3: Heat the oil in a frying pan until hot and deep fry the meatballs in batches until nicely browned and thoroughly cooked. Then put the meatballs on a paper towel covered plate to drain. Then put on serving plate and garnish with cilantro sprigs and a bowl of the peanut dipping sauce and enjoy Goshen’s Thai meatballs.
